Chicken Salad Sandwich

This Chicken Salad is a recipie that my hubby and I put together after I had a Chicken Salad Sandwich from Starbucks one day when I was STARVING. I had this killer Chicken Salad that was the bomb, but Starbucks was a great twist on an old favorite.....

Original Freak Chicken Salad

  • Three Chicken Breasts grilled with olive oil basting and any type of seasoning you like. I use Pampered Chef's Asian or Italian depending on the mood I am in. Dice this up
  • Veganaise (from Whole foods - whatever brand you like)
  • Diced up red and orange peppers (1/2 C)
  • Diced up Green Onions (1/2 C)
  • Diced up Celery (1/2 C)
  • Sliced Almonds (1/4 to 1/2 C)
  • Quarted up Grapes (3/4 C)
  • Ranch Dresisng Packet (add to Veganaise as taste warrents)
Mix it all up and either eat alone or add to a great whole grain bread (or crossaint or other fav sandwich bread).

Now - the twist to the Freak Chicken Salad.....

  • Substitute Dried Cranberries for the grapes
  • use only one pepper (red or orange) and increase it to 1 C
  • Instead of ranch dressing packet use wasabi to taste or dijon mustard (for those who don't like wasabi.)
This is a GREAT summer time dinner, lunch and snack. We try to keep a bowl of it in our fridge so when the girls get hungry they can get a bowl full or make a sandwich out of it.
